  • 5 pounds apples (mixed varieties)
  • juice from half a lemon
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 teaspoon vanilla
  • 1 tablespoon milk (for brushing on pie)
  • 1 tablespoon raw sugar (for topping pie)

Instructions

  1. 1. Preheat your oven to 425°F.
  2. 2. Prepare your apples by peeling and slicing them into thin pieces. Toss them in a skillet with lemon juice and zest.
  3. 3. Stir in brown sugar, granulated sugar, flour, and spices. Cook over medium heat until apples are tender yet firm.
  4. 4. Allow the filling to cool completely before transferring it to the prepared pie crust.
  5. 5. Cover with the second layer of crust, venting as necessary.
  6. 6. Brush the top with milk or beaten egg, sprinkle raw sugar on top.
  7. 7. Bake uncovered for 15 minutes, then reduce heat to 350°F and cover edges loosely with foil to prevent burning. Bake for an additional 40–45 minutes until golden brown and bubbling.
  8. 8. Let it cool for about four hours before slicing.
