  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix oil, eggs, sugar, vanilla extract, and pumpkin puree until blended. Stir in one cup of chocolate chips.
  4. Fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Spray an 8” x 4” loaf pan with oil spray and pour in the batter. Sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.
