  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices turkey bacon, cooked and crumbled (or smoked tempeh for a vegetarian option)
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese with shredded cheddar cheese. Mix in crumbled turkey bacon (or smoked tempeh), jalapeños, green onion, garlic powder, salt, and pepper until well combined.
  2. Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of filling diagonally across the center. Fold the bottom corner over the filling first, tuck in the sides, then roll tightly while sealing edges with water.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Carefully place eggrolls seam-side down into the hot oil.
  4. Fry for about 3-4 minutes until golden brown and crispy. Remove from oil and drain on paper towels.
