  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup (93 g) all purpose flour (for crumble)
  • ¼ cup (50 g) packed light brown sugar (for crumble)
  • 2 Tablespoons granulated sugar (for crumble)
  • 1 teaspoon ground cinnamon (optional, for crumble)
  • 4 Tablespoons (56 g) unsalted butter (melted, for crumble)
  • ½ cup (100 g) packed light brown sugar (for sweetness)
  • ¼ cup (50 g) granulated sugar (for sweetness)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the crumble. Add melted butter until small clumps form.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. Beat brown sugar, granulated sugar, and butter until fluffy. Mix in eggs, sour cream (or yogurt), and vanilla extract until combined.
  5. Gradually add dry ingredients to wet mixture followed by milk. Gently fold in diced apples.
  6. Fill muffin cups about three-quarters full with batter and sprinkle crumble on top.
  7. Bake for approximately 20 minutes until a toothpick comes out clean. Cool briefly before transferring to a wire rack.
