  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • Spices: cinnamon, ginger, nutmeg
  • 55 g unsalted butter (melted, for streusel)
  • 50 g all-purpose flour (for streusel)
  • 50 g brown sugar (for streusel)
  • 20 g rolled oats (for streusel)
  • 50 g brown sugar (for apples)
  • 1 teaspoon ground cinnamon (for apples)
  • 2 teaspoons cornstarch (for apples)

Instructions

  1. Prepare the crust by crushing the biscoff cookies and mixing with melted butter. Press into the bottom of a springform pan and refrigerate.
  2. Toss sliced apples with brown sugar, cinnamon, and cornstarch in a bowl.
  3. In another bowl, combine softened cream cheese and sugar until smooth. Add Greek yogurt, vanilla extract, spices, and eggs one by one.
  4. Layer half of the apple mixture on the crust followed by half of the cheesecake filling. Repeat layers.
  5. Bake in a preheated oven at 325°F (165°C) for about 85 minutes until set but slightly jiggly in the center. Cool completely.
  6. Prepare streusel topping with melted butter, flour, brown sugar, and oats; sprinkle over cooled cheesecake and bake for an additional 10 minutes.
