  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted)
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • 4 ½ ounces cream cheese (room temperature)
  • 2 tablespoons brown sugar (packed)
  • 2 cups powdered sugar (sifted, plus more if needed)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. In a saucepan, boil apple cider until reduced to 1/4 cup (about 30-35 minutes). Let cool.
  2. Mix flour, baking powder, baking soda, salt, and spices in one bowl. In another bowl, cream together butter and sugars until fluffy.
  3. Add eggs and vanilla to the butter mixture. Slowly mix in reduced apple cider and then the dry ingredients until just combined.
  4. Scoop dough onto lined baking sheets about three inches apart and bake for 11-13 minutes until they spring back when touched.
  5. Cool cookies on a wire rack before filling with your favorite frosting.
