  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1¾ cups all-purpose flour
  • Ground cinnamon
  • Allspice

Instructions

  1. Preheat oven to 350°F. Grease and line a 9-inch square baking dish.
  2. In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Remove from heat, then whisk in cold butter until melted.
  3. In a bowl, whisk eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually add the cider mixture to the wet ingredients while whisking continuously.
  5. Gently fold in flour until just combined.
  6. Pour batter into the prepared dish and bake for 22-25 minutes or until golden brown and a toothpick comes out clean.
  7. Cool briefly before topping with butter and a cinnamon-sugar mixture.
